Since the .config will be hidden from view by default the easy method is to use Finder. On the Finder menu, Click the “Go” and select “Go to folder” and search for “/Users/your-home-directory/.config/Inkscape”. It should open up to the Inkscape directory where you can right-click the preferences.xml file and delete it.

For Inkscape 1.0 versions, the best and easiest method to find the correct preference.xml file is to open finder and search for preference.xml. I looked for the file with the most recent modified date; I don’t guaranteed the location will be exact as I’ve reinstalled Inkscape multiples times and with multiple versions, both from DMG files as well as source tar files.
